Banana - Nut Bread

Here is another of our favorite family recipes, it's a banana-nut bread. Interestingly (take a note), it's especially favored by the male part of our family (Orville, Michael and Adib), they never get tired of it.



Banana Nut Bread

2-3 very ripe bananas
2 eggs
1 ¾ cups all purpose flour (whole wheat works great and is more nutritious)
1 cup regular sugar (brown sugar is even better)
1 cup chopped walnuts
100 gr (1 stick) butter, melted
½ cup plain yogurt
1 tsp baking soda
1 tsp vanilla
½ tsp salt

Preheat oven to 350 F

Combine all ingredients in a bowl and mix well.
Grease and flour a 9x9 baking pan (I use 2 smaller loaf pans). Pour the mix into the pan. Bake for about 45 min to 1 hour or until the top is golden-brown and inserted toothpick comes out clean. It’s delicious when it's warm with a little butter, or at room temperature. Good for breakfast and snack too.
